So, what's Tom Brady doing that's so important that he made a decision to skip the Patriots first organized team activity (OTAs) on Monday?

This one's easy. OTAs are Offseason Team Activities, where the team begins getting in shape for the upcoming season. He'll be fine. He's going to play about two more years and he might not play nice with the Patriots during all the offseason stuff over that stretch. No pads or contact are allowed during OTAs but you get full practice type environment where the offense faces the defense in 7 on 7 and 11 on 11 drills. If this is what makes the organization great then when it doesn't happen it's decidedly not great. Brady is a tone-setting leader, but that leadership has limited impact when he isn't in the building. It's possible the future hall of famer decides to show at some point during OTAs which will be good for everybody and hopefully mitigate some of the damage his uncharacteristic absence has already done.
